How many vegetables can you name?

Go ahead, try it, set the timer for 5 minutes and see how many different vegetables you can name.  It is a pretty good challenge.  Last year, my sister and I attended the Telluride film festival and while there, they were celebrating the 10-year anniversary of the film, Food Inc.  After the showing of the film, there was a question and answer session with Eric Schlosser among some other industry experts.  One of the guys on the panel mentioned he poses the question of “how many vegetables can you name?” to his son.  He said his son can name about 15, which at the time did not sound like that many.  However, try it, it is harder than you think. It is also a great exercise to then allow you to google vegetables to try.  Below is a list of 5 vegetables you may not be including in your weekly consumption which are quite delicious.  Give them a try. 

  1. Radishes – you can cut them up and throw them in a salad or my favorite way to prepare them is to chop them, throw some olive oil on them, and bake in the oven for about 30 minutes at 400 degrees.

  2. Jicama – looks like a big weird potato, but is much lower in carbs.  Jicama can also be eaten raw or roasted to make “jicama fries.”

  3. Kohlrabi - throw in a stirfry or a soup

  4. Broccolini - this is delicious grilled or roasted in the oven

  5. Parsnips - boil and make a mash, use garlic, salt, and pepper to your heart’s desire
